I. Introduction
Services industry is an industry made up of companies that primarily provide intangible products and services. Service industry companies are involved in retail, transportation, F&B services, banking, and entertainment. Focusing on F&B services, that includes restaurant, pubs, and coffee shops, are the organizations that provide the customers with food, and beverages in all its kind, some would prefer sticking on the local cuisine, some will prefer to shift to international or specific international cuisine, offering plates that will satisfy the customers’ needs, and taste of preference. Some will search for the atmosphere along with the perfect plate for the romantic date or the fat food with friends or the quick meal at their job lunch break. Every F&B organization should target their work in order to satisfy ever need for the customers, because no satisfaction, no free marketing, no new customers, finally no profit. Specifically talking Roadster dinner; the leading dinner in Lebanon with it international cuisine that offer variety of plates, beverages, and desserts; is managing to satisfy it customers’ needs with every opportunity that they can catch, Roadster dinner, deliver plates from around the globe, like steaks, pastas, burgers, salads, and sandwiches. Beside a diversity of beverages, like alcohol, soda, Ice Tea, and smoothies. And surely all that should be ended with the sweetest dessert that will satisfy every ones needs. Me as a loyal for Roadster dinner, and with some experience in the F&B industry, as bartender at Applebee’s Lebanon, I will enjoy talking and focusing on that industry that I would happily wish to re-enter.
1- Inventories and Assets within the Production System
Within any production process inventories and assets are main aspects for the good and excellency of the company’s systematic management. Such aspects differ between the two leading systems (services or manufacturing). In services based production system, inventories and assets lead the process. In such system, the inventories and assets differ between every field in this industry, like F&B, hospitality, insurance, education, training and consultancy. F&B industry/field requires inventories that are important in order to process a well systematic production, in such industry/field, food with all its materials (meat, chicken, fish, spices, beans, vegetables, fruits, etc.), beverages (alcohol, sodas, juices, etc.). The Know-How and experiences are keys of the process, where employees are at the heart of the organization; many schools consider employees as assets considering them the figure of the company which they interact with the customers in delivering the company’s productions in order to satisfy their needs. Hygiene products as the napkins, hand gel, soap, sanitizer, gloves, hairnets and capes highlights the clean image of the company which go side by side with the employees in order to satisfy the needs of the company’s customers that leads to an increase in the good will of clients, which in turn enhances and creates a significant reputation.
On the other hand assets are the useful and valuable things that strengthen the company in the market. Offices, operating branches, delivery centers, and central kitchenette are the F&B production rooms. One, offices are where all the administrative, marketing, and supply chain take place. Two, branches are where the dinner already exist and in which area regarding the customers’ needs. Three, delivery centers can be present in each operating branch, or in one independent branch that can provide all areas. Four, Central kitchenette is where all food inventories and preparations take place. Nevertheless, Equipment including machines, ovens, delivery transportation, platters, glasses, employee uniforms, and finally decorations (tables, chairs, ambiance, and lightning) are as well considered to be assets despite their depreciation. Thus all of the above are the shareholders’ valuable point of strength and the entities that determine their investment capital.
2- Key Operations and Operational Flow
As mentioned before about the inventory and assets of the F&B field in the services operation systems, and regarding the logical operational flow illustrated in the diagram, the administrative and paper work surely will be taken care at the offices of the company, which will conduct the supply chain from A to Z, and that will ensure the purchasing of the inventory in order to be delivered and shipped to the Central Kitchenette mainly and some directly to the operating branches. At the Central Kitchenette beside storing the inventory and controlling it, preparation of all minor and major components needed in the branches in order to maintain the perfect process to deliver goodness and satisfaction to the customer, so the food, sauces, dips, shakes, mixes, are all prepared at that place surely beside the preparation of the cartoon, plastic/paper bags, cups, packaging (napkin/wet napkin, salt, pepper, ketchup, knife and fork) for the home delivery service. And after all is well prepared, packaged and ready to go, the distribution process begin; after being managed by the office; to the operating branches and delivery centers, in order to store what is delivered to begin the last procedure in this operation system which is delivering food to our customers, side by side with the employees knowledge and experience the satisfaction is delivered and the process is complete.
3- Fail in the Organization’s Delivery System
After what mentioned before about the inventories and assets of the services operation system especially F&B field, and illustrating the operational flow of the process, two major points will affect the organization’s delivery system and bear a fail to align its operational performance measures.
